Featured Recipe: Roasted Pumpkin Salad with Burrata & Cashews

This roasted pumpkin salad is everything we love about seasonal cooking — warm, comforting, and layered with flavor. Caramelized pumpkin, creamy burrata, crunchy roasted cashews, and a touch of sweetness come together effortlessly for a dish that feels both cozy and elevated.

Finished with Herbes de Provence and Black Salt, this recipe is simple enough for a weeknight, special enough for entertaining, and proof that great salt really does make everything better.


Ingredients:

For the Roasted Pumpkin 

  • 1.5 lbs Pumpkin or butternut squash, peeled and sliced into wedges
  • 2 tbsp olive oil
  • 1 tsp    Salty Provisions
                  Garlic Pepper Salt
 
 

Ingredients:

For the Roasted Cashews: 

  • 1.5 lbs Pumpkin or butternut squash,
                 peeled and sliced into wedges
  • 2 tbsp Olive Oil
  • 1 tsp    Salty Provisions
                  Garlic Pepper Salt
 

Ingredients:

For the Assembly:

  • 1-2 balls burrata cheese,
    torn into large pieces
  • 1/3 cup Pomagranate seeds
  • 1-2 tbsp Salty Provisions
                      Black Salt
    (for finishing) 
  • 1 tbsp honey (for drizzle) 
  • 1 tbsp Olive Oil (for drizzle) 
  
 

Directions:

Preheat the oven to 200°C / 400°F.

1. Roast the Pumpkin

  • Toss the pumpkin slices with olive oil, garlic pepper salt. 
  • Arrange them in a single layer on a baking tray and roast for 30–35 minutes, turning once, until tender and caramelized at the edges.
 

2. Roast the Cashews

  • In a small pan, heat olive oil over medium heat. Add the raw cashews and cook for about 5–6 minutes, stirring occasionally, until golden and aromatic.
  • Once done, sprinkle with Herbes de Provence salt and let cool.
 

3. Assemble the Plate

  • Arrange the Roasted Pumpkin on a serving platter. 
  • Tear the Barrata aver the warm Pumpkin and scatter the roasted cashews and pomegranate seeds over the top.
 

4. Finish and Serve

  • Drizzle lightly with honey, olive oil and finish with a sprinkle of Black Salt. 
  • Serve warm or at room temperature.
