1.5 lbs Pumpkin or butternut squash, peeled and sliced into wedges

For the Assembly:

1-2 balls burrata cheese,
torn into large pieces
- 1/3 cup Pomagranate seeds

1-2 tbsp Salty Provisions
         Black Salt (for finishing)Â

1 tbsp honey (for drizzle)Â

1 tbsp Olive Oil (for drizzle)Â

Directions:
Preheat the oven to 200°C / 400°F.
1. Roast the Pumpkin
- Toss the pumpkin slices with olive oil, garlic pepper salt.Â
- Arrange them in a single layer on a baking tray and roast for 30–35 minutes, turning once, until tender and caramelized at the edges.

2. Roast the Cashews
- In a small pan, heat olive oil over medium heat. Add the raw cashews and cook for about 5–6 minutes, stirring occasionally, until golden and aromatic.
- Once done, sprinkle with Herbes de Provence salt and let cool.

3. Assemble the Plate
- Arrange the Roasted Pumpkin on a serving platter.Â
- Tear the Barrata aver the warm Pumpkin and scatter the roasted cashews and pomegranate seeds over the top.

4. Finish and Serve
- Drizzle lightly with honey, olive oil and finish with a sprinkle of Black Salt.Â
- Serve warm or at room temperature.
