Garlic Butter Salmon with Sautéed Spinach

Ingredients
For the Salmon:
- 2 salmon fillets (skin-on or off, your choice)
- 1 tablespoon olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 teaspoon Salty Provisions HOT SALT (or level up with HOTTER HOT or HOTTEST HOT SALT!)
- Juice of 1/2 lemon
- Lemon slices, for garnish
- Chopped fresh parsley (optional)
For the Sautéed Spinach:
- 1 tablespoon olive oil
- 2 cloves garlic, thinly sliced
- 6 cups fresh baby spinach
- Sprinkle of Salty Provisions SALT+PEPPER
Directions
Season & Sear the Salmon
Pat salmon dry and season both sides with HOT SALT. Heat olive oil in a skillet over medium-high heat. Add salmon, skin-side down (if using skin-on), and sear for 3-4 minutes until golden. Flip and cook another 2-3 minutes.
Garlic Butter Finish
Add butter and minced garlic to the skillet. Let the butter melt and baste the salmon with the garlicky goodness. Squeeze in lemon juice and let it sizzle. Remove salmon once cooked through (internal temp: 125–130°F for medium).
Sauté the Spinach
In a separate pan, heat olive oil over medium heat. Add sliced garlic and cook until fragrant (about 30 seconds). Toss in spinach and stir until just wilted, about 2 minutes. Season with a sprinkle of SALT+PEPPER and black pepper.
Serve It Up
Plate the salmon with a spoonful of garlic butter from the pan. Pile on the sautéed spinach. Garnish with lemon slices and parsley if desired.
