I love visiting my Mom. She always has a full fridge goodies from her daily culinary routine. I just opened up the fridge and pulled out a bunch of ingredients and whipped together this lovely tapenade/bruschetta topping for lunch. Also had some of Chuck’s Woodfired 3-Cheese Pizza Crust on hand that I got at the farmers market.
Here’s the list of ingredients:
Fresh diced tomatoes
Ear of corn, chilled, cut off the cob
Avocado, diced
Marinated red peppers, diced
Feta cheese, crumbled
Pickled banana peppers, chopped
Olive oil
Lemon juice
Fresh cracked black pepper
SALTY PROVISIONS' DOUBLE ONION + ROASTED GARLIC SEA SALT, to taste
Wow! So fresh, so easy! And if you have basic ingredients on hand, it requires very little effort to make some thing so tasty. Looks like I need to run to the market to get some refrigerated pantry staples to have on hand. It would even make a great topping on scrambled eggs or roasted potatoes.
